Instructions
Cut beef fat into 1-inch cubes
Render fat in thick-bottomed pot over low heat (275-300°F) until liquid
Strain fat through cheesecloth into parchment-lined container
Cool to warm (90-100°F) before whipping
Use electric mixer to whip tallow until thickened (5-7 minutes)
Notes
Use high-quality grass-fed beef fat for superior flavor
Store in airtight container at room temperature up to 3 weeks
Whipping until light and airy is critical for spreadable texture
