Ingredients
Scale
- 6 cups mixed salad greens
- 1 cup packed fresh basil
- 1/2 cup packed fresh parsley
- 1/4 cup packed fresh tarragon
- 2 tablespoons fresh chives
- 1 large ripe avocado
- 1 medium cucumber, diced into 1/2-inch cubes
- 1 cup cherry tomatoes, halved
- 1 can chickpeas, 15 ounces, drained and rinsed
- 3 tablespoons fresh lemon juice
- 1/2 cup Greek yogurt
- 1 garlic clove, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Combine fresh basil, parsley, tarragon, chives, and minced garlic in a food processor.
- Pulse the herbs and garlic until roughly chopped and fragrant, about 15 seconds.
- Add Greek yogurt and fresh lemon juice to the herb mixture.
- Drizzle in olive oil while pulsing until the dressing reaches your desired consistency.
- Season the green goddess dressing with sea salt and freshly ground black pepper.
- Taste and adjust lemon juice or salt as needed.
- Transfer the dressing to a separate bowl and set aside at room temperature.
- Wash and thoroughly dry the mixed salad greens using a salad spinner or clean towels.
- Place the dried greens in a large mixing bowl.
- Rinse the canned chickpeas under cold water and drain completely.
- Add the chickpeas to the bowl with the greens.
- Dice the cucumber into 1/2-inch cubes and add it to the salad base.
- Halve the cherry tomatoes and distribute them evenly throughout the salad.
- Slice the ripe avocado just before serving and gently add it to the salad.
- Pour two-thirds of the green goddess dressing over the salad.
- Toss gently but thoroughly until everything is coated.
- Divide the salad among serving bowls.
- Drizzle the remaining dressing on top before serving.
Notes
Dry the greens thoroughly before assembling to prevent a watery salad. Make the dressing a few hours ahead for deeper flavor, but add avocado and dressing close to serving time to keep everything fresh and crisp.
