  • 1 cup packed fresh basil
  • 1/2 cup packed fresh parsley
  • 1/4 cup packed fresh tarragon
  • 2 tablespoons fresh chives
  • 1 large ripe avocado
  • 1 medium cucumber, diced into 1/2-inch cubes
  • 1 cup cherry tomatoes, halved
  • 1 can chickpeas, 15 ounces, drained and rinsed
  • 3 tablespoons fresh lemon juice
  • 1/2 cup Greek yogurt
  • 1 garlic clove, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Combine fresh basil, parsley, tarragon, chives, and minced garlic in a food processor.
  2. Pulse the herbs and garlic until roughly chopped and fragrant, about 15 seconds.
  3. Add Greek yogurt and fresh lemon juice to the herb mixture.
  4. Drizzle in olive oil while pulsing until the dressing reaches your desired consistency.
  5. Season the green goddess dressing with sea salt and freshly ground black pepper.
  6. Taste and adjust lemon juice or salt as needed.
  7. Transfer the dressing to a separate bowl and set aside at room temperature.
  8. Wash and thoroughly dry the mixed salad greens using a salad spinner or clean towels.
  9. Place the dried greens in a large mixing bowl.
  10. Rinse the canned chickpeas under cold water and drain completely.
  11. Add the chickpeas to the bowl with the greens.
  12. Dice the cucumber into 1/2-inch cubes and add it to the salad base.
  13. Halve the cherry tomatoes and distribute them evenly throughout the salad.
  14. Slice the ripe avocado just before serving and gently add it to the salad.
  15. Pour two-thirds of the green goddess dressing over the salad.
  16. Toss gently but thoroughly until everything is coated.
  17. Divide the salad among serving bowls.
  18. Drizzle the remaining dressing on top before serving.

Notes

Dry the greens thoroughly before assembling to prevent a watery salad. Make the dressing a few hours ahead for deeper flavor, but add avocado and dressing close to serving time to keep everything fresh and crisp.
