A sugar free gelatin recipe for weight loss is a perfect light dessert with zero added sugar, refreshing flavor, and the sweet satisfaction you need without derailing your goals.

  • Total Time: 4 hours 15 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 packets unflavored gelatin powder, 14 grams
  • 2 cups water or unsweetened fruit juice
  • 23 tablespoons stevia or erythritol sweetener
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh berries, optional
  • 1/8 teaspoon sea salt

Instructions

  1. Pour 1/2 cup cold water into a small mixing bowl.
  2. Sprinkle the unflavored gelatin evenly over the surface without stirring.
  3. Let the gelatin bloom for 5 minutes until spongy.
  4. Heat 2 cups unsweetened fruit juice or water in a saucepan over medium heat until steaming but not boiling.
  5. Add the stevia or erythritol sweetener and stir for 2 minutes until dissolved.
  6. Remove from heat and let the liquid cool for 3 minutes.
  7. Slowly pour the warm liquid over the bloomed gelatin while whisking constantly.
  8. Whisk for 3-4 minutes until the gelatin fully dissolves and the mixture becomes clear.
  9. Add fresh lemon juice, vanilla extract, and sea salt.
  10. Taste and adjust sweetness if needed.
  11. Strain the mixture through a fine mesh sieve for a smooth texture.
  12. Divide into 6 serving glasses or pour into an 8×8-inch dish.
  13. Add fresh berries after 20 minutes of chilling if using.
  14. Refrigerate for 4-6 hours until fully set.
  15. Serve chilled directly from the refrigerator.

Notes

Bloom the gelatin properly and avoid boiling the liquid, as excessive heat can weaken the setting texture. Chill for the full 4-6 hours for the best firm, jiggly result.
