- 2 packets unflavored gelatin powder, 14 grams
- 2 cups water or unsweetened fruit juice
- 2–3 tablespoons stevia or erythritol sweetener
- 2 tablespoons fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 cup fresh berries, optional
- 1/8 teaspoon sea salt
Instructions
- Pour 1/2 cup cold water into a small mixing bowl.
- Sprinkle the unflavored gelatin evenly over the surface without stirring.
- Let the gelatin bloom for 5 minutes until spongy.
- Heat 2 cups unsweetened fruit juice or water in a saucepan over medium heat until steaming but not boiling.
- Add the stevia or erythritol sweetener and stir for 2 minutes until dissolved.
- Remove from heat and let the liquid cool for 3 minutes.
- Slowly pour the warm liquid over the bloomed gelatin while whisking constantly.
- Whisk for 3-4 minutes until the gelatin fully dissolves and the mixture becomes clear.
- Add fresh lemon juice, vanilla extract, and sea salt.
- Taste and adjust sweetness if needed.
- Strain the mixture through a fine mesh sieve for a smooth texture.
- Divide into 6 serving glasses or pour into an 8×8-inch dish.
- Add fresh berries after 20 minutes of chilling if using.
- Refrigerate for 4-6 hours until fully set.
- Serve chilled directly from the refrigerator.
Notes
Bloom the gelatin properly and avoid boiling the liquid, as excessive heat can weaken the setting texture. Chill for the full 4-6 hours for the best firm, jiggly result.
