Instructions

  1. Gather the silken tofu, measuring spoons, and a blender or food processor.
  2. Open the silken tofu package carefully and drain excess liquid into a small bowl.
  3. Reserve 1/4 cup of the drained liquid if needed for adjusting consistency later.
  4. Place the silken tofu block into the blender, breaking it into 4 to 5 large pieces for even blending.
  5. Measure white miso paste directly into the blender.
  6. Add rice vinegar, sesame oil, minced ginger, and minced garlic to the blender.
  7. Pour 1/4 cup water into the blender with all ingredients.
  8. Blend on high speed for 45 to 60 seconds until completely smooth.
  9. Stop blending and check the thickness by observing how the dressing coats the back of a spoon.
  10. Add fresh lime juice and blend for 10 additional seconds to combine.
  11. Transfer the dressing to a measuring cup or small bowl for tasting and adjusting.
