- 1 cup graham cracker crumbs
- 4 tablespoons melted unsalted butter
- 16 ounces cream cheese, room temperature
- 1 cup cold heavy whipping cream
- 1/2 cup powdered sugar, sifted

- 3/4 cup raw unsalted pistachios, finely ground
- 1/2 teaspoon pistachio extract, optional
- 1 1/2 cups fresh blackberries
- 1 tablespoon fresh lemon juice
- 2 tablespoons honey or agave syrup
- 12 fresh mint leaves, for garnish
- Extra chopped pistachios, for garnish
Instructions
- Combine graham cracker crumbs with melted butter in a small bowl until the mixture resembles wet sand.
- Press 2 tablespoons of the graham cracker mixture firmly into the bottom of each of 6 individual serving glasses or tower molds.
- Refrigerate the prepared bases for 15 minutes while preparing the cheesecake filling.
- Beat softened cream cheese with an electric mixer on medium speed for 3 to 4 minutes until light, fluffy, and completely smooth.
- Add powdered sugar and vanilla extract, then beat for 2 more minutes until fully combined.
- In a separate cold bowl, whip cold heavy cream on medium-high speed until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture using a rubber spatula to keep the filling airy.
- Divide the cheesecake mixture evenly between 2 separate bowls.
- Fold ground pistachios and pistachio extract into one bowl until the mixture becomes uniformly light green.
- Spoon half of the pistachio cheesecake mixture evenly into the 6 prepared towers and smooth the surface.
- Top each tower with the remaining plain cheesecake filling to create a two-layer effect.
- Cover loosely with plastic wrap and refrigerate for at least 3 hours, preferably overnight, until firmly set.
- Just before serving, combine blackberries, lemon juice, and honey in a small bowl and gently toss to coat.
- Spoon the blackberry mixture and accumulated juices over each chilled tower.
- Garnish each tower with whole blackberries, fresh mint, and chopped pistachios before serving.
Notes
For the smoothest texture, use fully room-temperature cream cheese and fold gently after whipping the cream. Add the blackberry topping within 30 minutes of serving to prevent the towers from becoming soggy.
