- 1 cup fresh strawberries, hulled and halved, 150 grams
- 1/2 cup fresh raspberries, 60 grams
- 1/2 teaspoon vanilla extract, optional

Instructions
- Pour boiling water into a large mixing bowl.
- Add the sugar-free pink gelatin and unflavored gelatin to the boiling water.
- Stir constantly for about 2 minutes until both gelatin products dissolve completely and the mixture becomes uniformly pink.
- Continue stirring for 30 additional seconds to ensure proper hydration and smooth texture.
- Pour cold water into the gelatin mixture while stirring gently.
- Allow the mixture to cool at room temperature for 5 minutes, stirring occasionally.
- Measure room-temperature Greek yogurt into a separate medium bowl.
- Whisk the Greek yogurt gently to break up any clumps and create a smooth base.
- Add sea salt and vanilla extract to the Greek yogurt.
- Whisk until the yogurt mixture is completely smooth and evenly flavored.
- Pour about one-third of the cooled gelatin mixture into the Greek yogurt while whisking steadily.
- Gradually pour in the remaining gelatin mixture while whisking continuously.
- Whisk for 1 full minute until the mixture becomes smooth, creamy, and pale pink.
- Hull and halve the fresh strawberries, removing any damaged portions.
- Gently fold the strawberries into the gelatin-yogurt mixture using a silicone spatula.
- Add the fresh raspberries and fold gently until evenly distributed without crushing the berries.
- Divide the mixture evenly among 4 serving glasses or containers.
- Transfer the containers to the refrigerator on a level surface.
- Refrigerate for at least 4 hours, or overnight for the best texture and flavor.
- Let each portion sit at room temperature for 2 minutes before serving.
- Serve chilled and enjoy immediately.
Notes
Use actively boiling water to dissolve the gelatin fully and avoid grainy texture. Let the gelatin mixture cool before adding it to the Greek yogurt so the yogurt stays smooth and creamy instead of separating.
