Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Pat the finely diced dill pickles thoroughly with paper towels to remove excess moisture.
- Cut the cold butter into small cubes and keep chilled until ready to use.
- Combine the all-purpose flour, baking powder, and salt in a large mixing bowl.
- Whisk the dry ingredients together until evenly combined.
- Add the cold butter cubes to the flour mixture.
- Use a fork or pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs.
- Fold in the freshly shredded sharp cheddar cheese.
- Add the diced dill pickles and mix gently until evenly distributed.
- Whisk together the whole milk and pickle juice in a small bowl or measuring cup.
- Pour the milk mixture into the dry ingredients.
- Stir gently with a fork until a rough, slightly sticky dough forms and no dry flour remains.
- Turn the dough onto a lightly floured surface and gently shape it into a rectangle approximately 1 inch thick.
- Cut the dough into 12 equal squares or use a biscuit cutter to form round biscuits.
- Place the shaped biscuits on the prepared baking sheet, leaving approximately 1 inch between each biscuit.
- Bake for 12 to 15 minutes, until the tops are golden brown and the centers are baked through.
- Remove from the oven and cool on the baking sheet for 2 minutes before serving warm.
Notes
Keep the butter very cold and mix the dough only until combined for tender, flaky biscuits. Pat the diced pickles dry before adding them to prevent excess moisture from making the biscuits soggy.
