Ingredients
- 4 pieces Chicken Breast (boneless, skinless, pounded thin)
- 2 cups Cherry Tomatoes (halved)
- 8 oz Fresh Mozzarella (sliced or small pearls)
- 3 tbsp Balsamic Glaze
- 3 cloves Garlic (minced finely)
- 1/2 cup Fresh Basil
- Olive oil, salt, black pepper, and dried oregano (to taste)
Instructions
- Season your chicken breasts evenly with salt, pepper, and dried oregano.
- Heat olive oil in a large skillet over medium-high heat until it shimmers.
- Sear the chicken until each side develops a golden brown color completely. Remove the seared chicken from the pan and set it aside temporarily.
- Sauté the minced garlic in the same pan to release all aromatic juices, then add your halved cherry tomatoes and cook until they soften slightly.
- Return the cooked chicken breasts back to the skillet, nestling them among the vegetables.
- Top each piece of chicken with a fresh slice of mozzarella cheese carefully. Cover the skillet for two minutes to let the cheese melt perfectly.
- Drizzle the balsamic glaze over the top and garnish with fresh basil leaves.
Notes
Use a digital meat thermometer to ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit. Pound your chicken breasts to an even thickness before cooking to guarantee they finish at the same time. Do not crowd the skillet, as this leads to steaming instead of browning the chicken properly. Add the fresh basil only at the very end to keep the leaves vibrant and flavorful.
