  • 1.5 cups Pearl couscous
  • 2.25 cups Vegetable or seafood broth
  • 1/4 cup Capers in brine
  • 2 tablespoons Butter
  • 4 wedges Lime wedges, for serving
  • 2 tablespoons Fresh cilantro leaves, for garnish

Instructions

  1. Combine minced garlic, fresh lime juice, chopped cilantro, ground cumin, 3 tablespoons olive oil, salt, and black pepper in a bowl to create the mojo marinade. Toss with shrimp and marinate at room temperature for 10 minutes.
  2. Heat 2 tablespoons of butter in a medium saucepan over medium heat until foamy. Toast dry pearl couscous for 2 minutes, then stir in warm broth and bring to a gentle simmer. Cover, cook on low for 8 minutes, let rest covered for 2 minutes, then fluff with a fork.
  3. Pat capers thoroughly dry. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Fry capers for 1 to 2 minutes until crisp, then transfer to paper towels using a slotted spoon.
  4. In the same skillet, add marinated shrimp in a single layer and sear undisturbed for 2 minutes on each side. Cook for another 1 to 2 minutes until pink and cooked through, then let rest for 1 minute before plating.
  5. Divide the fluffy pearl couscous evenly among four plates. Arrange seared mojo shrimp on top, spoon pan juices over them, sprinkle with crispy fried capers, and garnish with fresh cilantro leaves and a lime wedge.
