Ingredients

  • 2 cups boiling water
  • 2 cups ice-cold water
  • 2 cups fresh mixed berries
  • 1 cup plain Greek yogurt, optional
  • 2 tablespoons fresh lemon or lime juice
  • 1/4 cup light whipped cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Boil 2 cups of filtered water in a kettle or saucepan until large rolling bubbles form.
  2. Open 4 sugar-free gelatin packets and pour the contents into a large mixing bowl.
  3. Pour the boiling water over the gelatin while stirring constantly for 2 minutes until fully dissolved.
  4. Add the fresh lemon or lime juice.
  5. Stir in the vanilla extract.
  6. Let the hot gelatin mixture cool at room temperature for 5 minutes.
  7. Add 2 cups of ice-cold water while stirring slowly for 1 minute.
  8. If using Greek yogurt, whisk it in a separate bowl, then gently fold it into the gelatin mixture with a spatula.
  9. Add the fresh mixed berries and distribute them evenly throughout the mixture.
  10. Divide the mixture evenly among 6 serving cups or glasses.
  11. Refrigerate for at least 4 hours, or overnight, until firm and sliceable.
  12. Remove from the refrigerator 5 minutes before serving.
  13. Top each serving with light whipped cream.
  14. Garnish with extra fresh berries if desired.

Notes

Use sugar-free gelatin for the lowest-calorie version. Fresh berries work best because frozen berries can release extra moisture and make the gelatin watery. Chill for at least 4 hours for the best texture.
