- 3 medium sweet potatoes
- 2 cups cottage cheese
- 3 tablespoons raw honey
- 1 to 1.5 teaspoons red pepper flakes
- 1 teaspoon garlic powder

- 1.5 teaspoons sea salt
- 0.5 teaspoon black pepper
- 3 tablespoons olive oil
- 1 tablespoon butter
- 2 tablespoons fresh cilantro or parsley, chopped
- 2 tablespoons lime juice
Instructions
- Preheat the oven to 425°F.
- Wash and cut the sweet potatoes into 1-inch cubes.
- Toss sweet potatoes with olive oil, salt, and black pepper.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast for 25 to 30 minutes, stirring halfway through.
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Drain excess fat from the skillet.
- Stir in garlic powder, paprika, and sea salt.
- Add lime juice and mix well.
- In a small saucepan, combine honey and butter over low heat.
- Stir in red pepper flakes and a pinch of salt.
- Divide roasted sweet potatoes into serving bowls.
- Top with seasoned ground beef and cottage cheese.
- Drizzle with hot honey sauce.
- Garnish with fresh cilantro or parsley and serve immediately.
Notes
Roast the sweet potatoes in a single layer for the best caramelization. Add cottage cheese just before serving to keep the cool and creamy texture.
