  • 1.5 teaspoons sea salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 2 tablespoons fresh cilantro or parsley, chopped
  • 2 tablespoons lime juice

Instructions

  1. Preheat the oven to 425°F.
  2. Wash and cut the sweet potatoes into 1-inch cubes.
  3. Toss sweet potatoes with olive oil, salt, and black pepper.
  4. Spread the sweet potatoes on a baking sheet in a single layer.
  5. Roast for 25 to 30 minutes, stirring halfway through.
  6. Heat olive oil in a large skillet over medium-high heat.
  7. Add ground beef and cook until browned, breaking it apart as it cooks.
  8. Drain excess fat from the skillet.
  9. Stir in garlic powder, paprika, and sea salt.
  10. Add lime juice and mix well.
  11. In a small saucepan, combine honey and butter over low heat.
  12. Stir in red pepper flakes and a pinch of salt.
  13. Divide roasted sweet potatoes into serving bowls.
  14. Top with seasoned ground beef and cottage cheese.
  15. Drizzle with hot honey sauce.
  16. Garnish with fresh cilantro or parsley and serve immediately.

Notes

Roast the sweet potatoes in a single layer for the best caramelization. Add cottage cheese just before serving to keep the cool and creamy texture.
