Instructions

  1. Pour 2 cups filtered water into a medium saucepan without heating.
  2. Sprinkle 4 packets of unflavored gelatin powder over the cold water surface.
  3. Let the gelatin sit for 3 minutes to bloom fully.
  4. Gently stir the bloomed gelatin with a wooden spoon for about 90 seconds until all powder dissolves completely.
  5. Place the saucepan over medium heat for exactly 2 minutes, stirring constantly.
  6. Heat until the mixture reaches body temperature, about 98°F.
  7. Remove from heat immediately when the mixture becomes transparent and smooth.
  8. Pour fresh lemon juice into a large mixing bowl.
  9. Add monk fruit sweetener and whisk vigorously for 30 seconds.
  10. Tear fresh mint leaves by hand and add them to the sweetener mixture.
  11. Pour the warm gelatin mixture into the bowl while stirring constantly for 2 minutes.
  12. Strain the mixture through a fine mesh strainer to remove mint leaf debris.
  13. Pour the strained gelatin mixture into 8 small glass serving cups or 1 large glass container.
  14. Distribute 1 tablespoon of mixed fresh berries into each cup.
  15. Sprinkle the Himalayan pink salt evenly across the top surface.
  16. Cover with plastic wrap.
  17. Refrigerate for at least 6 hours or overnight until completely set and firm.
  18. Remove from the refrigerator 5 minutes before serving to soften slightly for the best texture.

Notes
