  • 1 pound spaghetti pasta
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 2 cans crushed tomatoes, 28 ounces each
  • 2 tablespoons tomato paste
  • 1 cup unsalted beef broth
  • 3 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon sugar
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Dice the yellow onion into quarter-inch pieces.
  2. Mince the garlic cloves finely.
  3. Heat a large heavy-bottomed pot or Dutch oven over medium-high heat.
  4. Add olive oil and allow it to shimmer for about 1 minute.
  5. Add ground beef and break it apart with a wooden spoon.
  6. Cook for 8 to 10 minutes until no pink remains and the beef is deeply browned.
  7. Press the beef against the sides of the pot to render the fat and deepen the browning.
  8. Drain excess fat if more than 2 tablespoons pools in the pot.
  9. Add diced onion and cook for 5 minutes until softened.
  10. Add minced garlic and cook for 1 minute until fragrant.
  11. Stir in tomato paste and cook for 2 minutes to caramelize slightly.
  12. Pour in crushed tomatoes and scrape the browned bits from the bottom of the pot.
  13. Add beef broth, salt, black pepper, oregano, and sugar.
  14. Bring the sauce to a gentle simmer.
  15. Reduce heat to medium-low and simmer for 20 minutes, stirring occasionally.
  16. While the sauce simmers, bring a large pot of salted water to a rolling boil.
  17. Add spaghetti and cook according to package directions until al dente.
  18. Reserve 1 cup of pasta water before draining.
  19. Add drained pasta directly to the sauce pot.
  20. Toss gently until every strand is coated with the meat sauce.
  21. Add reserved pasta water 1 tablespoon at a time if the sauce is too thick.
  22. Stir in dried basil or fresh basil if available.
  23. Serve hot with freshly grated Parmesan cheese.

Notes

Brown the ground beef thoroughly for the deep savory flavor that defines this dish. Combine the hot pasta directly with the sauce so every strand gets coated, and use reserved pasta water to loosen the sauce if needed.
