Instructions

  1. Heat olive oil in a large heavy-bottomed pot over medium-high heat for 1 minute.
  2. Add diced onions and sauté for 3 to 4 minutes until translucent and fragrant.
  3. Stir in minced garlic and fresh ginger.
  4. Cook for 1 minute until aromatic.
  5. Add curry powder and turmeric.
  6. Stir constantly for 1 minute to bloom the spices.
  7. Add cubed chicken to the pot.
