- 1.5 lbs chicken breast, cubed
- 1 can coconut milk, 14 oz
- 2 cups potatoes, diced
- 1.5 cups bell peppers, diced
- 1.5 cups onions, diced
- 3 tablespoons curry powder
- 1 teaspoon turmeric
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1 whole scotch bonnet pepper, optional
- 1 cup vegetable broth
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons green onions, sliced, optional
Instructions
- Heat olive oil in a large heavy-bottomed pot over medium-high heat for 1 minute.
- Add diced onions and sauté for 3 to 4 minutes until translucent and fragrant.
- Stir in minced garlic and fresh ginger.
- Cook for 1 minute until aromatic.
- Add curry powder and turmeric.
- Stir constantly for 1 minute to bloom the spices.
- Add cubed chicken to the pot.
- Stir to coat the chicken with the spice mixture and cook for 3 minutes.
- Pour in vegetable broth and coconut milk.
- Stir well to combine all ingredients evenly.
- Add diced potatoes and the whole scotch bonnet pepper, if using.
- Bring the mixture to a boil.
- Reduce heat to medium-low and simmer uncovered for 20 minutes.
- Add diced bell peppers and stir gently.
- Continue simmering for 10 to 15 minutes until potatoes are fork-tender and chicken is cooked through.
- Remove the whole scotch bonnet pepper carefully using tongs.
- Taste and adjust seasoning with salt and black pepper as needed.
- Squeeze fresh lime juice into the pot and stir to brighten the flavors.
- Ladle the curry bowl into serving bowls.
- Garnish each serving with fresh cilantro and sliced green onions before serving.
Notes
Bloom the curry powder and turmeric in hot oil before adding liquid for deeper Caribbean flavor. Keep the scotch bonnet pepper whole for gentle heat, or omit it completely for a milder curry bowl.
