Ingredients
- 2 packets unflavored gelatin powder, 1/2 ounce
- 1 cup high-quality protein powder, 120 grams
- 3 cups filtered water
- 1 to 2 teaspoons sugar-free flavoring extract
- 2 to 3 tablespoons sugar-free sweetener
- 1 packet sugar-free gelatin, 0.3 ounce, optional
Instructions
- Pour 1 cup of cold filtered water into a medium mixing bowl.
- Sprinkle both packets of unflavored gelatin evenly across the surface of the cold water.
- Allow the gelatin to bloom undisturbed for exactly 2 minutes.
- Measure the protein powder into a separate small bowl.
- Set both bowls within arm’s reach of your stovetop or kettle.
- Boil 2 cups of filtered water in a kettle or saucepan over medium-high heat.
- Pour the boiling water slowly into the bloomed gelatin while stirring constantly with a wire whisk.
- Continue whisking until all gelatin granules dissolve completely and the mixture becomes clear, about 1 minute.
- Remove the bowl from heat and allow the gelatin mixture to cool for 3 minutes.
- Add the measured protein powder to the cooling gelatin mixture while whisking continuously and vigorously.
- Whisk for 2 to 3 minutes until the protein powder is completely incorporated and no lumps remain.
- Pour in the sugar-free flavoring extract.
- Add the sugar-free sweetener to the mixture.
- Whisk for 1 additional minute to distribute the flavoring ingredients evenly.
- Divide the mixture evenly among 8 serving glasses or pour into a single 9-inch square container.
- Place in the refrigerator for 4 hours or the freezer for 1 hour until completely set.
- Serve chilled directly from the refrigerator.
Notes
Bloom the gelatin in cold water before adding hot water to prevent lumps. Let the gelatin mixture cool slightly before whisking in protein powder so the texture stays smooth and the protein does not become grainy.
