Hot Honey Cottage Cheese Sweet Potato Beef Bowl

Ingredients
1 lb lean ground beef
1 cup (240ml) full-fat cottage cheese
2 medium sweet potatoes, cubed
2 tbsp olive oil
1 tbsp honey
1 tsp chili flakes (adjust to taste)
1 tsp dried garlic
1 tsp dried onion
1/2 tsp paprika
Zest of 1 lime
Fresh cilantro or parsley, chopped (for garnish)
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C)
Toss sweet potato cubes with 1 tbsp olive oil, garlic, onion, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and golden.
While sweet potatoes roast, heat remaining 1 tbsp olive oil in a skillet. Cook ground beef over medium heat, breaking it apart, until browned and cooked through. Season with paprika, salt, and pepper.
In a small saucepan, gently warm 1 tbsp honey with 1 tsp chili flakes for hot honey drizzle (or use store-bought hot honey).
Divide roasted sweet potatoes, beef, and cottage cheese among bowls. Drizzle with hot honey, garnish with lime zest, cilantro/parsley, and serve.
