- 2 packets unflavored gelatin, 14 grams
- 1 cup Greek yogurt, 227 grams
- 1/2 teaspoon flavoring agent, such as vanilla extract, almond extract, mint extract, sugar-free pudding powder, or 2 tablespoons sugar-free fruit syrup
- 1/4 cup cold water, for blooming gelatin
Instructions
- Pour 1/4 cup cold water into a small mixing bowl.
- Sprinkle the unflavored gelatin evenly over the surface of the water.
- Allow the gelatin to bloom for exactly 2 minutes without stirring.
- Microwave the bloomed gelatin for 15 seconds until liquid and smooth, stirring once halfway through heating.
- Add your chosen flavoring agent to the warm liquid gelatin.
- Stir until the flavoring is completely combined.
- Let the gelatin mixture cool to room temperature for about 5 minutes.
- Place Greek yogurt into a medium mixing bowl.
- Slowly pour the cooled gelatin mixture into the yogurt while whisking continuously.
- Whisk for about 1 minute until the gelatin and yogurt are fully combined and smooth.
- Continue whisking for another 30 seconds to incorporate a little air and create a lighter texture.
- Divide the mousse mixture equally among 4 serving glasses or bowls.
- Place the filled glasses on a level shelf in the refrigerator.
- Refrigerate for at least 4 hours until firm and completely set.
- Chill overnight for the best firmness and texture.
- Serve cold directly from the glass or bowl.
Notes
Cool the melted gelatin before mixing it with yogurt to prevent curdling. Whisk continuously while combining to avoid lumps, and chill for at least 4 hours for the best mousse-like texture.
